Second recipe of the day + an update

I’ve been waiting for the day that I get to make peach ice cream out of the Palisade peaches that have been rolling around my fridge for a week. Today is that day. We passed through Palisade, CO on the drive back from Telluride last weekend and bought 28 peaches (that’s right, twenty-eight). We only ate five on the drive (yes, five), giving me plenty to play with. Mom gave me her ice cream maker a few weeks ago but I hadn’t used it yet- it’s amazing.

Update: my fingers are still tingling from the peppers last night.

I blended about five peeled peaches, a can of chilled light coconut milk, a banana and a little vanilla, then the ice cream maker did its job! Delish.
