Lentils for lunch

I just made this as a back-to-school lunch!

Portable Lentil Salad

1 cup dry lentils

2 medium sweet potatoes

1 large head of broccoli

1 bunch kale, chopped

2 tbs coconut oil

1 tbs sesame oil

1 tbs rice vinegar

1 tbs coconut aminos

1 tbs sesame seeds

1 lemon’s juice

Cook the lentils- 3 cups water to 1 cup lentils. Bring to a boil, then cover and simmer until no water remains (about 30 minutes). Meanwhile cut up the sweet potatoes and broccoli, toss with coconut oil and roast as usual. Once the lentils are done, add all the wet ingredients and the kale and stir it all up. Add and stir the broccoli and sweet potatoes when they’re done. Add pepper and extra seasonings to taste! Makes about 4 servings
