This was probably the best curry I’ve made! As you can see, the original recipe calls for beef, but chicken worked out great! Additional changes: I used one full can of light coconut milk, then added in just the cream from a can of regular where the recipe says to. Also didn’t feel like buying lemongrass and lime leaves, so those were out. I also hate mushrooms. And ate it with sweet potatoes instead of cauliflower rice. Highly recommend!
